Update

I just wanted to post a quick update explaining where I've been.

With my move to a new apartment and the holidays, I've not been doing as well as I was before. I've not been concentrating on my calorie intake since the end of October. However, I am happy to report that I'm only up 4 pounds from where I was in my last post.

I've done very well to not gain more and am making a much more solid effort to continue my weight loss.

Woooo! I finally reached the 340s! This feels great, I'm so excited!

I guess this is also the end of my first month which is pretty awesome that I've lost this much weight already. I'm still not having any problems. It's so easy to lose weight when I watch what I eat!

This last week was odd. My weight fluctuated a lot throughout the day and I have actually been weighing less later on than when I wake up. I'm not sure when I should actually weigh because of this but this is my 10 am weight for the end of my third week. When I look at my total change I really can't complain about 14 pounds in 3 weeks, that's an insane amount of weight.

So I actually had gained weight this morning but when I weighed later in the day I had dropped so I'm using that number. I think it was because I ate at like 11 pm last night so when I weighed at my regular time my metabolism had not been burning dinner for as long as usual.

First goal has been reached on the last day of my second week. I'm really excited about that and even though I realize the weight loss will slow down eventually I hope that it doesn't for awhile.

Last night I made vegetable fried rice and marinated tofu. It was a more healthy take on fried rice using egg beaters and only a small amount of oil. I even took the hour to make real brown rice! The overall product made a huge skillet full of food(3 cups of cooked rice) that was all only a little over 1000 calories. I split it in half, stored part in the refrigerator for lunch today and then had a nice dinner.

New goal is 346.4 which is the next 10 pounds for a total of 20! I also need to start going to the gym again, that would speed up this process even more.

Not much to report today and I'm running short on time because I have an early class and the weather is bad so it will take me awhile to get downtown. I'm predicting that I'll reach my goal tomorrow!

Much better on the weight loss. I'm just assuming the last 2 days had something to do with going out to eat.

Last night I made a new dish that I found on FatFree Vegan Kitchen | Sinlessly Delicious Recipes.

It was a Polenta and Tofu Skillet with Bok Choy. It was so good and it was also the first time I've ever marinated tofu which turned out to be an amazing thing to do.

Definitely having the leftovers for lunch today!

Well I gained more weight! I'm not even sure how this time...I only had 1800 calories yesterday.

Frustrating! But I'm not giving up...I'll just stick to what I was doing, it was working the other days. I knew I should not have eaten out the other day.


I just plugged my stats into the Mifflin-St. Joer equation to figure out my Resting Metabolic Rate and it's 2728 so I should be fine eating between 1800 and 2000 calories a day.

So after the big meal I had with friends I gained 0.4 pounds! I'm not going to change my Total Weight Change because it was just a splurge that will not be normally happening. I want my Total Weight to be the ongoing tally of how far I go down, not just fluctuation in my weight.

Not a huge loss in weight compared to some of the other days but if I look at it objectively 0.6 is an amazing 1 day loss.

Yesterday was a pretty typical meal day. I had oatmeal and a peach for breakfast, frozen weight watchers dinners for lunch, and I made curried cauliflower and chickpeas for dinner. I was also able to sneak in a WW frozen dessert(peanut butter cup ice cream) because I had about 300 calories left after dinner. Though even after the ice cream I was still under my 2000 goal so it was a good day.

Today I'm having lunch with a friend(uh oh!) and then having dinner with 2 other friends(at an Indian Buffet) so I'm going to have to use my practical eating big time today!

This ends my first week and my total final loss for the first week is a huge and surprising 6.6 pounds.

I actually didn't believe my weight loss this morning. For some reason I was anticipating a slight gain for really no reason other than self-doubt. So when I got on the scale and I had lost 1.4 pounds I almost died. I actually weighed again, re-calibrated the scale, and then weighed a third time but I got the exact same weight each time.

I started this wanting to lose 2 pounds in my first week so I can say I am feeling really good right now! The weight loss on top of the ease of this diet is astounding. I actually don't want to call it a diet in the way people think because I've honestly just changed the way I eat and I'm staying full and satisfied with every meal.

On to week 2!

Some more weight loss this morning, almost an entire pound. I'm excited about tomorrow's weigh-in so I'll have my first completed weekly weight change.

Yesterday I did not eat nearly as many calories as I usually manage but I was definitely not starving myself and was actually quite full.

Breakfast: 1/2 cup of oatmeal and a Venti iced nonfat latte (180 calories)
Lunch: 2 weight watchers ravioli frozen meals (500 calories)
Dinner: I made burritos with non-fat refried beans, non-fat sour cream, avocado slices, and Quorn Chik'N Cutlets that I cooked in some salsa on multigrain tortillas. (690 calories for 2)

That ended my day with a total caloric intake of 1,370 which is actually quite low now that I look at it again. Oh well, I promise I'm not starving myself, I was actually about to explode from being full after that 2nd burrito! Healthy food can be really filling!

I was completely shocked by this morning's loss of 1.2 pounds. Yesterday I traveled to the suburbs to say goodbye to one of my best friends who is moving to South Korea for a year. While there we decided to have lunch at California Pizza Kitchen(DIET ALERT!). However, I attempted to make healthy choices while still feeling like I was cheating. We split a hummus appetizer, a half of the Thai Crunch salad(yes, 1/4 of a salad each), and then I had 2 pieces of the Tomato Basil pizza. Apparently I was successful because I was rewarded with more weight loss this morning.

I woke up to a huge surprise this morning with a 2.2 pound loss from yesterday. Since Tuesday my weight has remained stable so I've not wanted to blog because that's not as fun to talk about!

I've actually been struggling with Weight Watchers because of a surprising problem...I can't eat all of my points. Because of my weight, they give me way too many points I'm required to eat in a day. Instead I've decided to follow the point system but also record my calories because I want to keep my daily caloric intake in the 1700 - 2200 range which I feel is a good amount for weight loss. So far I've noticed myself having a hard time reaching 2000 calories now that I'm being conscious of what I eat and I record everything.

Overall, I'd say the first 5 days have been easy and successful!

Last night I made an amazingly delicious curried cauliflower and black beans for dinner. It was filling and crazy healthy. The smell of coriander and cumin cooking brightened by day.

Today is the day that I start my weight loss. I've decided to use the Weight Watchers system to manage my portions. I think this is the first time I've published my weight online for anyone to view.

Back in high school I weighed 400+ and over the course of undergrad I was able to get myself down to 299 which was the "skinniest" I had been since being a little kid. After graduating undergrad I moved to Chicago and started graduate school. Over the past 2 years I've watched my weight climb up to where it currently is.

I'm tired of being overweight so today that is going to start to change!
