First goal has been reached on the last day of my second week. I'm really excited about that and even though I realize the weight loss will slow down eventually I hope that it doesn't for awhile.
Last night I made vegetable fried rice and marinated tofu. It was a more healthy take on fried rice using egg beaters and only a small amount of oil. I even took the hour to make real brown rice! The overall product made a huge skillet full of food(3 cups of cooked rice) that was all only a little over 1000 calories. I split it in half, stored part in the refrigerator for lunch today and then had a nice dinner.
New goal is 346.4 which is the next 10 pounds for a total of 20! I also need to start going to the gym again, that would speed up this process even more.
